What better way to celebrate winter in Maine than to utilize Maine blueberries to create a classic winter sweet!<\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><strong>Blueberry Gingerbread \u2013 <\/strong><em>Cooking Down East<\/em><\/h4>\n\n\n\n<h5 class=\"wp-block-heading\">Ingredients<\/h5>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1\/2 cup shortening<\/li>\n\n\n\n<li>1\/2 teaspoon salt<\/li>\n\n\n\n<li>1 cup sugar<\/li>\n\n\n\n<li>1 egg<\/li>\n\n\n\n<li>2 cups flour<\/li>\n\n\n\n<li>1\/2 teaspoon ginger<\/li>\n\n\n\n<li>1 teaspoon cinnamon<\/li>\n\n\n\n<li>1 teaspoon baking soda<\/li>\n\n\n\n<li>3 tablespoons molasses<\/li>\n\n\n\n<li>1 cup sour milk or buttermilk<\/li>\n\n\n\n<li>1 cup Maine blueberries<\/li>\n\n\n\n<li>3 tablespoons sugar<\/li>\n<\/ul>\n\n\n\n<h5 class=\"wp-block-heading\">Directions<\/h5>\n\n\n\n<p>Cream shortening. Add salt. Add sugar gradually. Add unbeaten egg and beat mixture until light and creamy.<\/p>\n\n\n\n<p>Sift and measure flour. Sift with ginger and cinnamon.<\/p>\n\n\n\n<p>Measure baking soda into buttermilk or sour milk. Stir baking soda to dissolve.<\/p>\n\n\n\n<p>Add sifted dry ingredients and sour milk alternately to creamed mixture. Add 3 tablespoons molasses.<\/p>\n\n\n\n<p>Add blueberries. Use a greased and floured 9\u00d79-inch pan. Turn batter into pan. Sprinkle 3 tablespoons sugar over top of batter. Bake at 350 degrees Fahrenheit (175 Celsius) for 50 to 60 minutes.<\/p>\n\n\n\n<p>Chopped raisins may be substituted for the blueberries.
