That lost food, she said, also represents wasted energy, labor, water and other resources\u2014as well as increased climate change impacts. At the same time, 12% of Mainers are food insecure\u2014a pre-pandemic figure that is likely higher now\u2014including one out of five children.<\/p>\n<p>A <a href=\"https:\/\/umaine.edu\/mitchellcenter\/maine-food-waste-solutions-team\/#interns\">team of eight undergraduate students<\/a> from 91福利, the University of Maine at Farmington (UMF), the University of Southern Maine (USM), Thomas College in Waterville, and New York University (NYU), led by Mitchell Center Faculty Fellow <a href=\"https:\/\/umaine.edu\/mitchellcenter\/maine-food-waste-solutions-team\/#leader\">Susanne Lee<\/a>, are working together to pilot solutions that can reduce both food waste and food insecurity in Maine. The students presented their work at the summit, sharing the progress made across <a href=\"https:\/\/umaine.edu\/mitchellcenter\/road-to-solutions\/food-waste-management-empowering-maine-businesses-toward-sustainability\/#sixsolutions\">six solution areas<\/a>. These projects grew from the work of the Mitchell Center\u2019s <a href=\"https:\/\/umaine.edu\/mitchellcenter\/materials-management\/\">Materials Management team<\/a><strong>,<\/strong> which identified reducing food waste as the highest priority for managing solid waste in Maine, and from an <a href=\"https:\/\/umaine.edu\/mitchellcenter\/road-to-solutions\/food-waste-management-empowering-maine-businesses-toward-sustainability\/\">earlier project<\/a>\u00a0 led by Susanne that included outreach and collaboration with diverse stakeholders to assess the needs and opportunities for reducing wasted food.<\/p>\n<p>The students work with a diverse group of <a href=\"https:\/\/umaine.edu\/mitchellcenter\/maine-food-waste-solutions-team\/#faculty\">faculty advisors<\/a>\u00a0 including Jesse Minor and Mark Pires from UMF, Jeremy Pare from Thomas College, Dennis Gilbert from USM, and Jason Bolton, Ivan Fernandez and <a href=\"https:\/\/umaine.edu\/mitchellcenter\/people\/travis-blackmer\/\">Travis Blackmer<\/a> from 91福利. Asher is a senior at the University of Southern Maine pursuing a bachelor\u2019s degree in communications and media studies. She works with 91福利 faculty advisor <a href=\"https:\/\/umaine.edu\/mitchellcenter\/people\/travis-blackmer\/\">Travis Blackmer<\/a>\u00a0to help communities determine their potential food waste cost savings and identify a community specific food recycling solution. A food waste drop-off and composting site in Winslow, and five sites in Portland, <a href=\"https:\/\/www.pressherald.com\/2021\/04\/20\/winslow-begins-food-waste-recycling-program-this-week\/\" target=\"_blank\" rel=\"noopener noreferrer\">launched on Earth Day, April 22<\/a>. Dominique is a 91福利 junior studying political science with minors in legal studies and ecology and environmental sciences.<\/p>\n<blockquote>\n<p style=\"text-align: left\"><em>This internship really emphasized the importance of good listening skills. When it comes to diverse stakeholders with concerns and interests, you need to be able to listen well to understand their needs and challenges.<\/em><\/p>\n<p style=\"text-align: left\">Dominique DiSpirito<\/p>\n<\/blockquote>\n<p>Dominique is also working with <strong>Hannah Crayton<\/strong> to increase food donations from Maine food businesses and then connect those food donations to those in need \u2014 to ensure that no Maine food goes to waste. Using the Food Rescue US software system, which has been successfully used in other parts of the country, the students are training community partners to pilot a Food Rescue MAINE statewide network. These include creating engaging postcards to go home with students in their lunches, a toolkit for high school students, and a poster competition for kids. Zach is a Thomas College senior with a double major in small business\/entrepreneurship and psychology.<\/p>\n<p><strong>From challenges to opportunities<\/strong><\/p>\n<p>In addition to the student presentations at the Maine Food Waste Solutions Summit, representatives from several <a href=\"https:\/\/umaine.edu\/mitchellcenter\/maine-food-water-solutions-summit-participants\/\">organizations and businesses<\/a> talked about their efforts and successes in reducing food waste. The summit drew more than 120 participants from around Maine, representing state agencies and policymakers, nonprofit organizations, municipalities, farms and other food producers, schools, hospitals, composting companies, the hospitality industry, and more.<\/p>\n<p>Angel Veza, <a href=\"https:\/\/refed.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">ReFED<\/a> senior manager of capital, innovation, and engagement, led off the summit by putting Maine efforts in the context of national work to reduce hunger and food waste. Angel was followed by Sarah Nichols, Sustainable Maine Director with the <a href=\"https:\/\/www.nrcm.org\/\" target=\"_blank\" rel=\"noopener noreferrer\">Natural Resources Council of Maine<\/a>, who connected ReFED\u2019s work at the national level with legislative efforts in Maine to develop solutions for food waste.<\/p>\n<p>The summit also focused on Maine success stories. Olivia Doucette, operations manager for <a href=\"https:\/\/usm.sodexomyway.com\/contact\" target=\"_blank\" rel=\"noopener noreferrer\">Sodexo at USM<\/a>, talked about their use of the LeanPath system and working with students to identify where food waste happens and how it can be reduced<u>.<\/u><\/p>\n<p>Melanie Loyzim, commissioner of the Maine Department of Environmental Protection (DEP), also attended the summit, along with \u2018composting guru\u2019 and organics management specialist Mark King. The food waste solutions team has been working closely with DEP, and recently <a href=\"https:\/\/umaine.edu\/news\/blog\/2021\/04\/29\/dep-partners-with-mitchell-center-to-launch-maine-food-too-good-to-waste-campaign\/\" target=\"_blank\" rel=\"noopener noreferrer\">received funding<\/a> from DEP\u2019s Solid Waste Diversion Grant Program.
