{"id":4234,"date":"2023-08-09T18:53:42","date_gmt":"2023-08-09T22:53:42","guid":{"rendered":"https:\/\/umaine.edu\/foodrescuemaine\/?p=4234"},"modified":"2023-08-18T14:16:01","modified_gmt":"2023-08-18T18:16:01","slug":"pilot-3-maine-upcycled-food-products","status":"publish","type":"post","link":"https:\/\/umaine.edu\/foodrescuemaine\/2023\/08\/09\/pilot-3-maine-upcycled-food-products\/","title":{"rendered":"Pilot 3: Maine Upcycled Food Products"},"content":{"rendered":"<h4>After discovering how many surplus crops farmers struggled to sell (pilot 2), we knew we had to figure out new markets for their use.<\/h4>\n<h4>Upcycled food products are foods (often surplus food or produce seconds) that are repurposed through processing techniques.<\/h4>\n<h4><strong>Goals <\/strong><\/h4>\n<ul>\n<li>To expand the available markets for surplus crops.<\/li>\n<li>To increase the shelf life of food and make it more versatile.<\/li>\n<\/ul>\n<h4><strong>Methodology\u00a0<\/strong><\/h4>\n<ol>\n<li>We met with the USDA to see what the biggest food waste categories in Maine were.<\/li>\n<li>We collaborated with Kennbec Valley Community College&#8217;s food preservation cooking class.<\/li>\n<li>Local farms brought their surplus crops to the culinary arts program for experimentation in preserving their surplus harvest.<\/li>\n<li>The students created creative and nutritious recipes out of this surplus harvest.<\/li>\n<li>Because this happened during the Covid-19 lockdown, recipe samples were mailed out, and a Zoom meeting was held with our partners to determine the efficiency of these recipes in the market.<\/li>\n<\/ol>\n<h4><strong>Partners\u00a0<\/strong><\/h4>\n<ul>\n<li>Sodexo<\/li>\n<li>Pineland Dairy<\/li>\n<li>Good Shepherd Food Pantry<\/li>\n<li>Walter Beesley (Maine Public Schools Director of Nutrition)<\/li>\n<\/ul>\n<h4><strong>Results\u00a0<\/strong><\/h4>\n<p>After being vetted by our partners, recipes for surplus apples, butternut squash, skim milk, and cheese were created.
